Our team wanted to rebuild our drivetrain and were wondering what would be the best option. We were looking to use omni wheels but which size would be best and what rpm should we be aiming for with them.

This entirely depends on your situation. Seeing all the defense and manuevering going on, I would say something around at least 60 in/sec would be nice for speed.
In terms of wheels, I would go for the smallest size that you can use (maybe those new 2 in omni-wheels plus some 2 in flex wheels) but still get over the barrier with to lower your center of gravity and prevent tipping.
